Agave sugar is a natural sweetener derived from the agave plant (Agave salmiana). This fleshy plant thrives mainly in the arid and semi-arid regions of Mexico and the southern United States, where it is used for the production of tequila, mezcal, inulin – and, as in this case, a sweetener.
From the agave juice found in the core of the plant, both agave syrup and agave sugar are produced. These two sweeteners share similar properties and unique benefits – with their composition being particularly noteworthy, as they consist of at least 95% fructose!
In addition, agave sugar is about 1.5–2 times sweeter than regular sugar, meaning you can use less to achieve the same level of sweetness.
It also boasts a lower glycaemic index (GI) compared to regular sugar, which means it raises blood sugar levels more slowly – making it a popular choice among diabetics.
